Zambos Tostones with Whipped Ricotta and Strawberry Sauce
Zambos Tostones

Ingredients:
Cheesecake ingredients:
8 ounces of ricotta cheese
¾ cup of Greek yogurt
Zest of one lemon
2 tablespoons of olive oil
½ teaspoon of cayenne pepper
1 tablespoon of chopped cilantro
Pistachios
Plantain Chips
Ingredients for the strawberry sauce:
1 cup of chopped strawberries
1 tablespoon of balsamic vinegar
1 tablespoon of lemon juice
1 teaspoon of salt
2 tablespoons of strawberry jam
Preparation:
Step 1: In a food processor or blender, pour the ricotta cheese, Greek yogurt, lemon zest, olive oil, cayenne pepper, and cilantro. Process until you have a creamy texture for the cheesecake.
Step 2: Place the cheesecake on a flat dish.
Step 3: In a bowl, combine balsamic vinegar, lemon juice, and strawberry jam. Add salt to taste. Let it marinate for 1 hour.
Step 4: On top of the cheesecake dish, place the chopped strawberries in the center. Pour the strawberry sauce to taste. And place pieces of Plantain Chips on top.
