Zambos Tostones with Whipped Ricotta and Strawberry Sauce

Zambos Tostones
30 minutes of preparation

Ingredients:

  • Cheesecake ingredients:
  • 8 ounces of ricotta cheese
  • ¾ cup of Greek yogurt
  • Zest of one lemon
  • 2 tablespoons of olive oil
  • ½ teaspoon of cayenne pepper
  • 1 tablespoon of chopped cilantro
  • Pistachios
  • Plantain Chips

 

  • Ingredients for the strawberry sauce:
  • 1 cup of chopped strawberries
  • 1 tablespoon of balsamic vinegar
  • 1 tablespoon of lemon juice
  • 1 teaspoon of salt
  • 2 tablespoons of strawberry jam

Preparation:

  • Step 1: In a food processor or blender, pour the ricotta cheese, Greek yogurt, lemon zest, olive oil, cayenne pepper, and cilantro. Process until you have a creamy texture for the cheesecake.
  • Step 2: Place the cheesecake on a flat dish.
  • Step 3: In a bowl, combine balsamic vinegar, lemon juice, and strawberry jam. Add salt to taste. Let it marinate for 1 hour.
  • Step 4: On top of the cheesecake dish, place the chopped strawberries in the center. Pour the strawberry sauce to taste. And place pieces of Plantain Chips on top.
